芫荽即是台灣料理中常見的辛香料:香菜。
芫荽種子的氣味與香菜葉有些接近,但較甜一些。
同樣是兩者氣味都有畫龍點睛的作用,
用量不需多,以免喧賓奪主。

※植物豆知識:
有些人非常抗拒芫荽的味道,這可能不是偶然的。
近來研究發現,人體中OR6A2這個嗅覺基因如果產生變異,
對於香菜的氣味會感受到非常強烈的肥皂味,於是會感到不舒服。
所以每個人聞到的香菜味,其實不一定是同一個味道喔!
這個例子再次讓我們了解,氣味真的是很主觀的事。
